Asparagus Crab Quiche

Ingredients

3/4 lb Asparagus; cut in 2" pieces
1 9" pastry shell; unbaked
6 oz Crab meat; flaked
1 cup Shredded Swiss cheese
1 Tbs Flour
3 Eggs; beaten
1 1/2 cup Light cream
1/2 tsp Salt
3 drops Hot pepper sauce
2 Tbs Grated Parmesan cheese
8 Spears asparagus; garnish

Procedure

  1. Preheat oven to 350. Line pie dish with pastry.
  2. Cook asparagus pieces in water until crisp-tender; drain and place on pastry. Top with crab meat, then combined cheese and flour. Mix eggs, cream, salt and hot pepper sauce; pour over crab. Sprinkle with parmesan cheese. Arrange spears, tips facing out, spoke fashion on top.
  3. Bake 35 to 40 minutes.

Serves 6. Per Serving: Calories 406; Calories from fat 259(64%); Fat 29g; Carbohydrates 16g; Sugar 2g; Fiber 2g; Protein 20g
