Chicken Cesar Salad

Ingredients

Marinade:
1/4 cup dijon mustard
1/4 cup lemon juice
1 tsp Worcestershire sauce
salt & pepper
Salad Dressing:
2 cloves garlic, crushed
1 tsp worcestershire sauce
1 tsp dry mustard
2 Tbs lemon juice
1 tsp black pepper
1 tsp salt
Also Need:
4 cups Mixed salad greens
2 boneless skinless chicken breasts

Procedure

  1. Mix marinade ingredients. Place chicken in a Ziploc bag, pour marinade over chicken. Let sit at least 1/2 hour and up to three hours.
  2. Grill chicken until juices run clear; timing varies with thickness of chicken. Approximately 5 - 8 minutes per side.
  3. Whisk together salad dressing ingredients. Set aside.
  4. Prepare salad greens, place on plates. Cut up grilled chicken, place on salad greens. Drizzle with salad dressing to taste.

Serves 2. Per Serving: Calories 190; Calories from fat 26(14%); Fat 3g; Carbohydrates 11g; Sugar 1g; Fiber 3g; Protein 30g
