Mandarin Salad

Ingredients

1/4 cup sliced almonds
1 Tbs plus 1 t sugar
5-6 heads bib lettuce
2 medium stalks celery
2 green onions
1 11oz. can mandarin oranges
Dressing
1/4 cup vegetable oil
2 Tbs vinegar
1/2 tsp salt
2 Tbs sugar
1 Tbs parsley
dash pepper
dash red pepper sauce

Procedure

  1. Cook almonds and sugar over low heat, stirring constantly for 8 to 10 minutes until sugar is melted and almonds are coated. Cool and break apart.
  2. Combine dressing ingredients in jar, cover tightly, and shake.
  3. Tear lettuce into bite-sized pieces; toss with dressing, chopped celery, thinly sliced onions, drained orange segments, and almonds.

Serves 6. Per Serving: Calories 191; Calories from fat 110(58%); Fat 13g; Carbohydrates 19g; Sugar 14g; Fiber 4g; Protein 4g
